Preserving natural resources
We calculate the carbon footprint of our activities annually, and carry out targeted projects to reduce it. We control our consumption of water, electricity and gas, recover 75% of our waste and we have halved single-use purchases. We pay attention to the design of our scenographers to offer our customers decorative elements made in France or Europe.

Our gastronomy prioritizes seasonal, local and labelled products. We deploy devices in our culinary workshops to avoid food waste. We are committed to offering all our guests gourmet vegetable or vegetarian culinary creations, chosen by 25% of our customers in 2025. Our aim is to base our cuisine on 100% sustainable fishing and to serve eggs that are 100% free range.

Supporting our talents and transmitting our know-how
In 2025 and 2026, we modernized and renovated our laboratories in Rue Chaillot and in Sèvres to improve the comfort of our teams.
